Best Cauliflower roast on stove top!!

I am back with a new recipe and today it is Cauliflower Roast. I love anything that is roasted , the best being potatoes (check out how to make the perfect potato fry here) and the second being cauliflower or gobi. Cauliflower is one of my favorite vegetables and this cauliflower roast recipe makes it even more enticing to me. I am sure many mothers out here know the difficulty of feeding veggies to the kids and I am no exception. My kid loves anything roasted just like me and he is a big big fan of this Cauliflower roast. Needless to say, this got over in a jiffy.

Cauliflower roast

This recipe does not involve deep frying and so does not risk the increase in your intake of calories. Taste bhi health bhi. What more do we need? However, there is one risk associated with this. The risk of the cauliflower roast getting over by the time you serve it. Haha, yes. I keep munching on it as soon as I cook. So, beware of this munching habit when you have guests at home. This cauliflower roast recipe is super simple and can be paired with plain rice, rotis or even dal, sambar or curd rice. It goes well with almost everything or even nothing too. Let us move on to the recipe now.

Preparation Method for Cauliflower Roast

Serves:3
Preparation Time: 5 minutes
Cooking Time: 15 minutes

Ingredients:

Cauliflower : 1 medium sized
Coriander Powder : 1 tsp
Cumin Powder : 1 tsp
Chilli Powder : 3/4 tsp
Turmeric Powder : 1/4 tsp
Rice flour : 1.5 tbsp
Oil : 2 tbsp
Salt : as required
Amchur powder : optional

Method:

1. Wash the cauliflower very well in running water and separate the florets.
2. Parboil the florets in boiling water along with turmeric powder for exactly 5 minutes.

3. Drain the parboiled florets and keep aside.

4. Mix all other ingredients along with the drained florets. Ensure the florets are not broken. Set aside the marinated florets for some time if possible.

5. Heat oil in a dosa pan. Place the marinated cauliflower florets on the pan and roast on low flame. Keep turning them often and continue till they are nicely charred and roasted.

6. Garnish with coriander leaves and serve hot.

Notes:

1. Marinated florets can be refrigerated (preferably kept in the freezer) for some time to make the masalas seep deep inside.
2. A cast iron dosa tava is the best to make this roast.
3. Garam masala can also be added.
4. Amchur powder or chat masala can also be sprinkled at the end for a tangy taste. Lemon juice can also be added.

5.For the mentioned quantity, I had roasted the florets as two batches on the tava. Ensure the tava is not overcrowded.
